Bread and Butter Pudding with Apples and Stewed Prunes

I love bread and butter pudding - I've certainly made lots of different ones using various breads such as brioche, challah, tsoureki and croissants - and even a savoury one with parsnips. This time I'm using ciabatta and filling the center with slices of granny smith apple and my rooibos stewed prunes.
